It&#8217;s like\u00a0 wearing snuggly woolen socks on a frigid day.<!--more--><\/p>\n<p>Here are thre reasons why this kind of dish is perfect for right now.<\/p>\n<p>First, they usually involve ingredients that are already at hand in the kitchen pantry, and in many cases are healthy ones as well.\u00a0 It can be a smorgasbord of whatever you have on hand.\u00a0 Think broth, carrots, celery, greens and protein like beans, chicken, pork or beef.\u00a0 I like to think that I am preparing a healthy dish packed with nutritious ingredients, even if the dish in question is chili, which can be primarily meat-based.\u00a0 The beans provide that aura of healthfulness<\/p>\n<p>Second, they are fix it and forget it dishes in that once the ingredients are chopped up and combined in a big pot or slow cooker, the cook can walk away for some period of time and come back to a finished dish.\u00a0 Most folks think of stews as being long-cooking, but in fact they can be quickly prepared, sometimes in thirty to forty-five minutes.<\/p>\n<p>Finally, making a big pot of anything provides the opportunity to freeze the leftovers in small containers for future meals when there\u2019s just too much going on to cook dinner.<\/p>\n<div id=\"attachment_106527\" style=\"width: 310px\" class=\"wp-caption alignleft\"><a href=\"http:\/\/kennetttimes.com\/wp-content\/uploads\/2015\/03\/huntersstew1-300x225.jpg\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-106527\" class=\"size-medium wp-image-1065274 \" style=\"border: 2px solid black; margin: 4px;\" src=\"http:\/\/kennetttimes.com\/wp-content\/uploads\/2015\/03\/huntersstew1-300x225.jpg\" alt=\"huntersstew1\" width=\"300\" height=\"225\" \/><\/a><p id=\"caption-attachment-106527\" class=\"wp-caption-text\">Hunters Stew<\/p><\/div>\n<p>I love making soups and stews for so many reasons, including that they are a great way to feed the family inexpensively.\u00a0 They provide comforting, warm meals on cold winter days.<\/p>\n<p>After a bowl or two of these, we&#8217;re sure that winter chill won&#8217;t stand a chance.<\/p>\n<p>&nbsp;<\/p>\n<p><b>Slow Cooker White Chicken Chili<\/b><\/p>\n<p>Courtesy of Danielle Nichols of \u201cPeaceful Cooking\u201d<\/p>\n<p>2 boneless skinless chicken breasts, cup into bite sized pieces<br \/>\n1\/2 onion, chopped<br \/>\n1 recipe for Homemade Basic White Sauce (recipe below)<br \/>\n6 oz green chilies, chopped<br \/>\n4 oz jalapenos, chopped<br \/>\n3 garlic cloves, minced<br \/>\n1 cup dried Great Northern beans<br \/>\n2 ears of corn, kernels cut from the cob<br \/>\n1 zucchini, chopped<br \/>\n4 cups chicken broth (or water)<br \/>\n1 tsp cumin<br \/>\nSalt and pepper to taste<br \/>\nAvocado and cilantro to garnish (optional)<\/p>\n<p>Combine all of the ingredients into your slow cooker. Set the slow cooker to low and cook for 8 hrs. Garnish if desired and serve.<\/p>\n<p><b>Homemade Basic White Sauce<\/b><br \/>\n4 tablespoons butter<br \/>\n6 tablespoons flour<br \/>\n3 cups milk<br \/>\nSalt and pepper to taste<\/p>\n<p>In a medium saucepan, melt the butter over medium heat. Whisk the flour into the butter until a paste is formed and it bubbles.<\/p>\n<p>Whisk in the milk and continue to whisk until the butter and flour have dissolved. Cook and stir for about 5 or 6 minutes, being sure that nothing sticks to the bottom or sides. The sauce will thicken a bit as it cools.<\/p>\n<p><b>Hunters Stew<\/b><\/p>\n<p>Adapted from Gwen Wilson of \u201cSimply Healthy Family\u201d<\/p>\n<p>&nbsp;<\/p>\n<p>8 cups (2 quarts) chicken broth<\/p>\n<p>1 pound ground chicken or other meat<\/p>\n<p>large yellow onion, chopped<\/p>\n<p>2 cups cooked white beans (cannellini or navy)<\/p>\n<p>2 cups cubed butternut squash<\/p>\n<p>2 cups brussel sprouts, trimmed<\/p>\n<p>1 heaping spoonful tomato paste<\/p>\n<p>1 tablespoon olive oil<\/p>\n<p>salt and pepper to taste<\/p>\n<p>&nbsp;<\/p>\n<p>Prepare the vegetables in advance. Combine in a pre-heated dutch oven. Add olive oil. Add onion and saut\u00e9 for 5-8 minutes. Add ground meat and cook till browned, 6-8 minutes lowering heat a bit if necessary. Add tomato paste and stir to combine. Pour in broth while scraping the bottom of the pot with a wooden or plastic spoon to remove browned bits. Add squash, brussel sprouts, beans and salt. \u00a0Lower heat and cover. Simmer 15 minutes.
